15 Minute Mini Donut

I was experimenting in the kitchen with the pizza dough recipe that I created a few months back and successfully made delicious nann. I thought I’d give a go and try to make donuts...And you know what? It worked! As my husband took a bite of it and I was anxiously waiting beside the couch to hear his response, he said, “This is actually pretty good!” I was happy I found a solid dough recipe I can use for so many different things. Because this dough is originally for pizza it won't be very sweet, so make sure you have a glaze or roll your donuts in sugar. This quick and easy donut recipe is going to be a new family favorite. Donut Ingredients

  • 1 cup water, heated to 110 degrees (very warm, almost too hot for comfort)
  • 1 tablespoon sugar
  • 1 tablespoon olive oil
  • 1 envelope (2 ¼ teaspoons) rapid-rise or instant yeast
  • 2 ¾ cups white or whole wheat flour
  • 1 teaspoon salt
  • 8 cups canola oil(1.9 L), for frying

Glaze Ingredients

  • 1 ½ cups powered sugar
  • 3 tablespoons milk
  • ½ teaspoon vanilla
  • 2 teaspoons cinnamon

Instructions

  • Fill a large pot with 2 inches (5 cm) of canola oil. Heat over medium-high heat until the oil reaches 160°C
  • In a medium bowl, mix powered sugar, cinnamon, milk and vanilla until you achieve a smooth glaze. Add more sugar or milk to adjust consistency. The milk will make it thinner, the sugar will make it thicker!
  • Whisk water, sugar, oil and yeast in a liquid measuring cup or small bowl. Allow yeast to proof for 5 minutes.
  • Combine flour and salt. Slowly pour in the water mixture and process until a shaggy ball forms.
  • Dump the dough onto a floured work surface and quickly knead dough a few times until it comes together.
  • Take 2 tbsp of dough and roll into a log, then attach the ends – basically make a ring shape. Continue to do this until you have the desired amount.
  • Working in batches, add the donut rings to the hot oil and fry for 3 minutes on one side or until golden brown. Flip and cook on the other side for 1–2 minutes more, until cooked through and golden brown all over.
  • Use a wire skimmer to transfer the donut holes to a wire rack set over a baking sheet.
  • Pour or dip in glaze – coat evenly. Add any glaze or topping combination you desire!
