What is better brownies or cookies? Lets get real here; they are BOTH amazing! How can you resist the chocolaty goodness of a brownie and the portability of a cookie - Together they truly make the ultimate dessert. This brownie cookie recipe is pretty simple to make and give you all of the good parts of a brownie – shiny, crackly crust, fudgy middles, chewy edges, and intense chocolate flavour. That’s pretty good for just one little cookie! What is great about this recipe is that there is no butter in it which makes it less fat and healthy-ish...Who am I kidding these cookies are indulgent and delicious - You deserve a little chocolaty goodness today! This recipe will for sure give you major brownie points with your family.

INGREDIENTS

  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 200 grams dark chocolate or semisweet chocolate chips
  • 1/4 Cup + 2 Tablespoons oil
  • 2/3 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs

INSTRUCTIONS

  1. Heat oven to 350°F and line a large baking sheet with parchment paper.
  2. In a double boiler, add the chocolate and oil to melt. Whisk until combined and melted.
  3. While the chocolate melts, whisk together the flour, cocoa powder, baking powder and salt until combined. Set aside.
  4. In a large bowl, combine the eggs, brown sugar and granulated sugar together in a large mixing bowl. Beat for 5 minutes.
  5. Pour the cooled chocolate mixture into the egg mixture, fold in the chocolate mixture until it is just combined.
  6. Add in the dry mixture, fold in.
  7. Spoon out the batter in balls onto your prepared baking sheet, spaced at least two inches apart.
  8. Transfer the baking sheet to the oven and bake for 10-12 minutes, until the tops of the cookies are crinkled and slightly domed.
  9. Cool for 15-20 minutes.
